Please note that while this recipe is entirely free from refined sugar, it does use a very small amount (5g) of the Daim Bar Toffee recipe, which contains rice malt syrup. which is still a sugar (although it is free of fructose) and it can impact your blood sugar levels. If this is an issue, please consider an alternative ingredient or recipe.

It’s winter. It’s 2°c outside, and even as I’m typing right now, I can barely feel the ends of my fingers. But it’s summer somewhere in the world, like one of those upside-down countries where everyone rides kangaroos and spiders are the size of Volvos and only most of them are fatally poisonous. And that means only one thing: IT’S TIME FOR ICE CREAM.

This uses the oldest healthy food trick in the book: turning a banana into ice-cream, also known as nice cream – and once you’ve frozen your banana, this whole thing can be made (and completely devoured) in less than five minutes. I’ve stated that this can make up to two servings, but really it depends on the size of banana you use, and/or just how impatient and greedy you are.
