You know me, I like to indulge… but not too much. Let’s not go crazy here. However, in baking this giant skillet cookie, in my fancy new iron skillet, I may well have gone sliiiiightly crazy. Y’see, I’m currently on a super-restrictive nutrition plan, so things that normal people eat like bread, rice, pasta… basically any carbs, ever, are off the table. Completely. But this Tuesday was my RE-FEED DAY – I had 24 hours to lose my mind in food, and I did not intend to waste that opportunity. And so, gripped by a maniacal fever to eat all the things, I baked and almost immediately devoured this skillet cookie in one sitting. Along with some homemade ginger ice cream (sugar-free, obvs – and recipe to come!). Insert embarrassed-face emoji. I almost died of food.
But I survived! And here I am to pass on my skillet-cookie knowledge to you, my friend. Use it wisely, and hey: maybe don’t try to eat it all at once. I know it’s delicious but… trust me on this. So are ya ready? Then LET’S SKILLET.
