I’ve done it! I’ve won at pancakes. The competition is over, all lines are closed, the votes have been tallied, and the result is DELICIOUS.
At the moment I’m kind of on a super-low-carb kick, so I’ve been unable to enjoy my usual breakfast staple of sugar-free oat & banana pancakes (which is a shame, because they are similarly scrumptious); but this week I found myself really jonesing for a pancake fix. And so, this recipe was borne: virtually no carbs (okay, there are are 4. But 4 grams of carbs in three pancakes!), high in mono-unsaturated fats, and pretty much perfect for a keto diet.
So get your pans warm and prepare to make yourself some of ketolicious pancakes. LET’S START A PAN(cake)DEMIC.
And with that, you’re all done. And if a paltry 3 pancakes aren’t enough to satisfy you, then you can always go (macadamia) nuts and make as many as you damn well please. Because PANCAEKS!
